Remember all those crazy scooters that were driving like maniacs on the road and made us fear for our lives on arrival to Mui Ne???
Just two days into our trip and we hopped on the back of what some may refer to as a "donor-cycle."
Xuan and his friend from the kite surfing school, Felix who we met at cooking class, offered to take us on a scooter tour to the neighboring town, Phan Thiet, and experience the locals version of Vietnam.
Ashley was nervous, but I was excited to get an authentic, Vietnamese experience, exploring the countryside on the back of the national mode of transportation.
My favorite part about Ashley's picture on the bike is that it was completely stationary.
We were still parked in Xuan's restaurant when this picture was taken,
and Ashley was already holding on for dear life!

Our first stop, Pho 39!
We turned down an alleyway to stop at an authentic, Vietnamese breakfast place.
No tourists here!
Pho is a Vietnamese noodle soup consisting of broth, linguine-shaped rice noodles called bánh phở, a few herbs, and meat. It is primarily a breakfast food and a popular street food in Vietnam. Pho is primarily served with either beef or chicken. The Hanoi and Saigon styles of pho differ by noodle width, sweetness of broth, and choice of herbs.

YES!!! I ate the Pho from the restaurant in the alley.
(NO! I did not get sick!).
It was delicious, savory, and heart warming.
Good for the soul.
Xuan was so happy to share his country and culture with us!
We were so fortunate to meet such a good friend who made us feel at home in a strange and distant land.
